Street food survival tips
- Follow the queue. A line of office workers beats any review site.
- Eat at lunch and after dark. Many stalls sell out by early afternoon, and night markets start around 5pm.
- Use the condiment caddy. Sugar, fish sauce, chilli flakes and chillies in vinegar are there to season your noodles your way.
- Fork and spoon. Thais eat with a spoon in the right hand and push food onto it with the fork. Chopsticks are for noodle soups.
- Ice is fine. Ice in cylinders with a hole through the middle is factory-made and safe.
